I guess its a little late to answer but, gifted programs vary. You really need to find out what they will be doing with your kid on that day off from regular school. It's a lot different now. Atleast at YRDSB, you goto a gifted program which are at a few schools and you goto classes with other gifted kids all the time. You aren't just pulled out from your regular class for a few periods. You probably don't need this info anymore, but maybe it will help someone else.
At your child's age, French immersion is probably the better option, since she would be more challenged academically (learning material + learning French). The school should ask you to sign some paperwork that would allow the gifted designation to remain in your child's records, so that if you decide later on that you want to put her in gifted, the option would still be available. At the younger stages, learning a second language trumps the gifted program, where they may just be doing minor supplementary material (depending on the program/school). In our case, daughter was in French immmersion from k-6, but, when she got older, her teachers recommended that she be put in the gifted program based on the work she was doing in class, plus she was really bored/restless, not relating well with her peers, and they had noticed that she had been deemed as gifted in earlier testing. She is now flourishing in an English gifted program, where she is once again challenged academically and is with other children who are at her same intellectual and social developmental levels. Her French teacher, knowing she came from many years of immersion, ensures that she receives more challenging work than her classmates as part of her IEP/gifted program. Since she had so many years of French, she is much more fluent and it is more likely to 'stick' compared to if she had left in Grade 3.

We're hoping that, if she continues to retain the French she learned, that she could, if she wants, go back into French immersion in high school, where students can do both gifted and FI. The most important thing, if you decide not to do the gifted program, is to ensure that your child is regularly challenged to avoid boredom/frustration. Also, keep an eye out to how they are connecting with other students. There may be a point when your child outgrows her peers and needs to be around other kids that share the same interests and see the world as she sees it. At that point, it would be time to consider moving her into a gifted program.
I've been given the same difficult decision for my daughter, who is entering Grade 1 in the fall, with the choice of either a gifted class at another school, or FI with extra sessions conducted one-on-one by a special educator during class time. There's lots to consider, like the fact that FI typically has select 'entry points' during students careers, and in our board that's Grade 1 and 4, only. I was identified gifted in Grade 2, and went on to complete grades 4-12 in gifted classes (surrounded by students of similar intellect, with small class sizes of no more than 15 students).
